Yamuna Devi - 800 pages. Over 520 vegetarian recipes. It is most likely the most detailed and best vegetarian cookbook on Indian vegetarian cooking. It describes cooking techniques, a history of Indian vegetarian cooking, has nice illustrations, and has a good glossary. Includes a detailed "A-Z of General Information" on ingredients and techniques.
It has sections on appetizers, soups, and salads, light meals, savories, beverages and sweets. It has easy-to-follow instructions. All recipes are based on readily available ingredients and have been adapted for American kitchens. This book offers a sample menu of traditionally compatible dishes.
The author Yamuna Devi has spend over thirty years touring the Indian subcontinent, tracing the culinary tradition at its roots and learning the art from India's master chefs. She gathered many of the recipes from the royal families and temple cooks. Yamuna Devi studied the cuisine of every region of India, traveling and cooking on wood stoves in grass and clay huts and in the kitchens of sacred temples. She also studied at the Cordon Bleu.
This book was the 1987 IACP "Cookbook of the Year." I have personally eaten the author's cooking and can highly recommend this book.
